Eat Free: Broccoli Soup

Eating clean does not have to be boring, dull or tasteless!

What’s better than warm soup on a cold day? Or any day for that matter? For me a rich, thick, nutrient dense soup that eats like a meal, only takes 15-20 minutes to make, and has just a handful of ingredients is a win, win, win!

Not only is this soup bowl-licking-delicious, but the benefits of broccoli are endless!

First and foremost, it is anti-inflammatory and supports your body’s natural detoxification process. It contains fiber which helps aid in digestion and it’s an anti-aging immune system builder.

Broccoli is a powerful antioxidant and has the most concentrated source of vitamin C, higher than any other cruciferous vegetable you can eat.

This is one of the many simple, beautiful, right-from-nature foods that you will find on my blog; all easy to make into delicious dishes.

Recipe:

Broccoli Soup

Ingredients

1 head of broccoli – flower portion only
3 cups water
1 tsp Himalayan salt
1/2 tsp pepper
3 cloves garlic
1 small yellow onion
2 tbsp olive oil, then another 2 tbsp when blending

Directions

  1. Clean broccoli and cut off flowers
  2. Heat 2 tbsp olive oil in soup pot
  3. When the oil is warm, add chopped up onion and garlic and cook until translucent
  4. Add broccoli, water and salt and pepper
  5. Cover and let cook on medium heat until you can easily put a fork through the broccoli
    (approximately 12-15 minutes)
  6. When done add all contents from the pot to a Vitamix

Yes, you can use another blender but I strongly suggest making the investment. Well worth it as I use mine everyday for everything!
7. Start blending on a slow setting and work your way up to a quicker speed
8. When on high speed start to drizzle in a steady stream of the extra 2 tbsp of olive oil
9. Give one last blast at high speed then pour and enjoy! I like to drizzle a bit of olive oil on top and add some fresh cracked pepper

Simple, clean, yum!

    This is a great, simple recipe. Adding bone broth instead of the 3 cups of water would add all gut healing benefits as well. If you are vegan/vegetarian you could make your own broth from veggie scraps including the stalks of the broccoli that would not be used in this recipe. Can’t wait to try this!

    This soup was terrific! Thank you so much for sharing! I was in your store Oct. 20, my birthday present from my husband and son, and was quite excited about all the choices of good food to eat. The cupcakes were fantastic!! Sadly, I could not eat the icing, so your wonderful girl scraped it off. Yet, this was the BEST cupcake I have ever eaten! Thank you for all the hard work that goes into inventing these recipes. Keep up the great work! A big fan from NJ!

    Do I hear that you have a cookbook coming out soon? I saw you on Today and can’t wait to make the bread. I had suffered from unexplained symptoms for 5-6 years. Saw many doctors including a Mayo clinic doc who suggested that maybe I was just unhappy in my marriage. He prescribed a mental health test. I walked out of his office and called my husband in tears. That was the last time I discussed my symptoms with doctors for 15 years. My symptoms worsened dramatically at 50 when I went into menopause. Two years later I was diagnosed on my first visit with a rheumatologist , Sjogrens Syndrome. The flares come and go. I have been on chemotherapy and off it. Yea! I am committed to be responsible for my own health. That includes my gluten sensitivity, an anti-inflammatory diet and exercise . I have been looking for a healthy cookbook. Any suggestions
